ABOUT US
Our family farm, idyllically anchored in the village of Gažon above Koper, Slovenia, is an olive grower’s paradise. On this enchanting piece of land, we proudly and carefully nurture and cultivate our olive groves. All the members of the Grizonič family are devoted to our olive trees: brothers Aleš and Daniel, and our father Valter. We also have many friends who help us at the time of the olive harvest.
With a deep respect for tradition, nature and time, together with the combination of modern harvesting and processing techniques in our own olive press “torkla”, the olives are transformed within hours of harvesting into fragrant oils that boast exceptional aromas and soothing natural properties.
Our oil, named Viktorija, not only faithfully reflects all these values, but also exudes an exceptional quality that impresses in every dish, from the simplest piece of bread to exquisite culinary masterpieces.
HISTORY
The story of our Viktorija oil takes us back to 1988, when grandpa Šilvano planted the first olive trees, and to 1993 when he added another olive grove to his vision.
Grandpa Šilvano, an experienced farmer with a deep sense of tradition, was never satisfied with the oil he used to bring home for his family. He was convinced that the passion he had invested in his precious olive trees would have enabled him to produce a better-quality oil that would have preserved the exceptional richness of flavour and aromas typical of his land.
In 2001, Šilvano’s son Valter took over the olive-growing business and expanded the farm with additional plantations. We, Valter’s sons Aleš and Daniel, have also taken a keen interest in preserving this heritage.
Today, our olive groves comprise around 400 trees of selected varieties such as Istrska Belica, Črnica, Buga, Leccino, Maurino, Frantoio, Mata, Štorta and Coratina. The olive groves are scattered around the picturesque area of the village of Gažon.
The olive trees are cared for all year round, and a deliberate harvesting process starts as early as the beginning of October. In order to ensure the highest quality oil, we decided to set up our own oil mill in 2006. This allows us to treat each olive grove and each olive variety individually, at optimum maturity, and to process the olives immediately into fragrant oil after harvesting.
Today, Aleš, Daniel and our father Valter take care of the olive trees.
