OUR OILS

Tasting our olive oil opens the door to unexpected aromas and flavours that reveal the richness of its character. It reveals pleasant bitter and spicy nuances that come from a high concentration of polyphenols, powerful antioxidants that not only enrich the flavour but also “prolong its life”. At the same time, there is a diversity of aromatic notes – freshly cut grass with aromas of artichokes, green tomatoes, mint, chicory, almonds, basil and citruses. These essences are constantly changing and varying in intensity, due to the different varieties of olive trees from which we extract different oils.

MAURINO

Maurino Oil

The oil is delicate, of fresh olives. The fruitiness tends to be light, with herbaceous and slightly almondy tones. The taste is predominantly sweet; it has pleasant notes of bitterness and spiciness.

Due to its delicacy, Leccino is the ideal companion for salads, fish dishes, white meat, steamed vegetables, salads and fresh cheese. Its delicacy enhances the flavour of complex, spicy dishes.

MAURINO

Maurino Oil

FRANTOIO

The oil obtained from Frantoio olives is very pleasant to the nose with fruity notes of green olives, herbaceous tones and a characteristic scent of grass and fresh olives, accompanied by nuances of artichoke and green tomato; the taste is initially sweet, with balanced notes of bitter and spicy.

It is particularly fluid and pleasant to the taste due to its good oleic acid content. It is suitable for seasoning all kinds of salads, bruschetta, legume soup and barbecue meat. It also goes perfectly with a refined cuisine of fish dishes.

CORATINA

With its high oleic acid and antioxidant content this oil has excellent chemical characteristics that support its resistance to rancidity. Sensory analysis reveals a yellow colour with green reflections, a medium-high fluidity, a medium fruitiness, a strong taste, with an evident hint of almond, accompanied by nuances of artichoke and chicory; after an initial taste of sweetness, the oil shows a definite note of bitterness accompanied by a good spiciness.

Ideal for lovers of full flavours, excellent for enhancing main courses of meat and grilled vegetables, to accompany vigorous-tasting ingredients such as porcini mushrooms, anchovies, mature cheese, homemade bread and soups.

ISTRSKA BELICA

The oil has a herbaceous green fruitiness, with hints of artichoke, tomato and aromatic herbs. On the palate, the initial sweet note gives way to distinct bitter and spicy notes determined by a good polyphenol content, which improves its shelf life. The high oleic acid content, together with the low quantity of saturated fatty acids, makes the oil particularly fluid and pleasant to taste.

It loves challenging dishes. Excellent on roast porcini mushrooms, pasta, hot vegetable starters, red meat and game, risottos, home-made bread and soups

Frantoio
ČRNICA

An old Istrian indigenous variety. A high-quality oil with an intense green and yellowish colour, a fruity aroma and a  sweet taste of herbs, pine nuts and citrus fruits, with a medium bitterness and a moderate spiciness. This balanced oil is excellent for grilled blue and white fish, as well as for octopus salad and seafood, beans, chickpeas; it enhances and enriches various vegetable dishes. It does not impose its qualitative strength, but gives dishes an even greater richness of flavour and aroma.

Recommended combinations: with hard cheese, cold fish starters, codfish and delicate fish recipes.

Coratina
BLEND

A blend of extra virgin olive oils (Istrian Belica, Leccino, Frantoio, Maurino, Črnica, Coratina and Buga) for every good cuisine lover. It is characterised by fresh aromas of fruitiness and a more pronounced bitter and spicy taste. The aroma is reminiscent of freshly cut grass, fresh olives and almonds. It will accentuate the qualities of food, either cooked or raw, and contribute to your cooking creativity.

Our blend enriches the flavour of green salad dishes, risottos, fish, semi-hard cheese, grilled vegetables, white and red meat.

ČRNICA

Stara istrska avtohtona sorta. Olje visoke kakovosti, intenzivne zeleno-rumene barve, sadne arome in sladkega okusa po zeliščih, pinjolah in agrumih, srednje grenkobe in zmerne pikantnosti. To uravnoteženo olje je odlična začimba za modro in belo ribo na žaru, pa tudi za solato iz hobotnice in morskih sadežev, fižola, čičerike, izboljša in obogati različne zelenjavne jedi.

Ne vsiljuje svoje kakovostne moči, temveč daje jedem še večje bogastvo okusa in vonja. Priporočene kombinacije: s trdimi siri, hladnimi ribjimi predjedmi, polenovko in nežnimi ribjimi paštetami.
