FROM OLIVE TO OIL
We produce extra virgin olive oil from Slovenian Istria, in the territory where our olive trees thrive.
The olives in our olive groves are harvested by hand and with a rake, at optimum maturity. Only healthy fruit is selected for further processing, never left standing for too long, and stored in perforated crates before processing, which prevents overheating and possible fermentation. The intact fruit is then processed on the same day in our own oil mill at a temperature of no more than 27°C (cold-pressed), using exclusively mechanical methods.
This deliberate approach allows the preservation of all the outstanding characteristics of extra virgin olive oil and is key to ensuring the highest quality oil.
In our quest for quality, every process – from harvesting, storage in special aerated olive crates, separation of leaves and branches, and cold pressing to the appropriate storage of the oil in stainless steel tanks under nitrogen to prevent oxidation of the oil and at a controlled temperature – is carefully monitored to preserve all the sensory and chemical characteristics of the oil. The oil remains fresh and retains its original quality.
Tako premišljen pristop omogoča ohranitev vseh izjemnih značilnosti ekstra deviškega oljčnega olja in je ključnega pomena za zagotavljanje najvišje kakovosti olja.
V našem prizadevanju za kakovost se vsak proces – od obiranja, skladiščenja v posebnih zračnih zabojih za oljke, ločevanja listov in vej, hladnega stiskanja, do primernega skladiščenja olja v cisternah iz nerjavečega jekla pod dušikom, ki preprečuje oksidacijo olja in pri nadzorovani temperaturi – skrbno nadzoruje, da se ohranijo vse senzorične in kemične lastnosti olja. Olje ostane sveže in ohrani svojo prvotno kakovost.
